Lemon Squares

Ingredients: 

• 10 Soda Crackers
• 1 cup brown sugar
• 1/2 cup flour
• 1/2 tsp baking soda
• 1 cup shredded coconut
• 1 Pkg Sheriff Lemon Pie Filling
• 2 egg yolks* 
• Water

Directions:

Preheat oven to 375

Crush Soda Crackers fine, mix with butter and sugar

Add flour, baking soda, then coconut.

Spread 2/3 of mixture in a greased square pan

Cook Lemon pie filling as per instructions on box and pour into pan

Cover with remaining mixture

Bake approx. 1/2 hr until brown

Notes: 

*Make Forgotten Cookies from the leftover egg whites
